Description

Add a tropical twist to your meals with this Mango Chutney recipe. Bursting with sweet and tangy flavours, it's the perfect condiment for any dish!


Ingredients

  • 1 kg (2.2 lbs) ripe mangoes, peeled and diced
  • 200 g (1 cup) granulated sugar
  • 240 ml (1 cup) white vinegar
  • 1 medium-sized onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon red chili flakes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • Zest and juice of 1 lime

Instructions

  1. In a large saucepan, combine the diced mangoes, sugar, and white vinegar. Place the saucepan over medium heat and bring the mixture to a simmer. Cook for about 10 minutes, stirring occasionally, until the mangoes begin to soften.
  2. Add the finely chopped onion, minced garlic, grated ginger, red chili flakes, ground cumin, ground coriander, mustard seeds, turmeric powder, and salt to the saucepan. Stir well to combine all the ingredients.
  3. Reduce the heat to low and let the chutney simmer for approximately 45 minutes to 1 hour, or until the mangoes have completely softened and the mixture has thickened. Stir occasionally to prevent the chutney from sticking to the bottom of the saucepan.
  4. Once the chutney has reached the desired consistency, remove the saucepan from heat and stir in the lime zest and juice. Allow the chutney to cool completely before transferring it to sterilized jars.
  5. Store the mango chutney in the refrigerator for at least 24 hours before serving to allow the flavors to meld together. This chutney can be stored in the refrigerator for up to 2 weeks. Enjoy!

Notes

  • Instead of fresh ginger, you can use 1 teaspoon of ground ginger instead.
