Instructions
- In a large mixing bowl, whisk together the plain yogurt, lemon juice, and vegetable oil until smooth.
- Stir in the garlic, ginger, ground cumin, ground coriander, turmeric powder, paprika, garam masala, ground fenugreek (if using), cayenne pepper, and salt. Mix until all the ingredients are thoroughly combined, forming a smooth marinade.
- Add the chicken pieces, bell peppers, red onion pieces, and cherry tomatoes to the marinade. Ensure that everything is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate.
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
- Lightly grease the air fryer basket to prevent sticking.
- Arrange the marinated chicken, bell peppers, red onion, and cherry tomatoes in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to cook in batches.
- Air fry at 375°F (190°C) for 12-15 minutes, shaking the basket halfway through to ensure even cooking. Cook until the chicken is fully cooked and slightly charred on the edges, the vegetables are tender, and the cherry tomatoes are slightly blistered.
- Once cooked, transfer the chicken tikka, vegetables, and cherry tomatoes to a serving dish. For a complete meal, serve hot with naan, rice, or a side salad.
