The term "mess" comes from the way it is put together. Usually, you throw everything together on a plate or in a clear cup, and yes, it looks like a mess! Presentation is not the most important thing when it comes to this dessert. It’s the taste that leaves you with a smile on your face.

What ingredients does an Eton Mess contain?

A strawberry mixture or a mix of other fruits with meringue, whipped cream and sugar.

Where did Eton Mess originate?

Surprise, surprise, Eton Mess is originally from the town Eton in the UK. More specifically, from Eton College.

Some say, that Eton Mess was discovered there by accident during an annual cricket match, back in the early 1900’s. Apparently, someone had dropped their meringue on the floor and served it anyway. Others say that the Eton Mess can be credited to a Labrador dog who accidentally sat on someone’s picnic basket, crushing everything inside.

Can I use pre-made meringue for Eton Mess?

For this recipe, you can either purchase pre-made meringue or you can make it yourself. Alternatively, you can use homemade meringue cookies or store-bought meringue cookies.

Generally, I recommend using fresh meringue for the Eton Mess. However, I completely understand if you decide to go for the pre-made stuff. If you do decide to buy the meringue, then be careful in terms of where you buy it. Sometimes, it’s best to buy it directly in the bakery. The latter makes it super fresh, so there is almost no difference in taste. I can’t say the same for the supermarket counterpart.

If you make your own, ensure you use a clean, large bowl to get those all-important stiff peaks. Wipe the bowl with lemon juice and kitchen paper to be sure.

What are the best strawberries for Eton Mess?

The original Eton Mess recipe calls for strawberries. Obviously, if you buy fresh strawberries from the farmer’s market, your dessert will have tons of fresh flavour. No need to add too much icing sugar because you’ll want to preserve the fresh taste of the strawberries. With store-bought strawberries, you’ll need to add more sugar, in my opinion. Personally, I don’t like when there is too much sugar in desserts. It throws off the balance of flavours.

What's the best cream to use for Eton Mess?

Fresh, heavy whipping cream is an absolute must for this recipe. You want that nice fluffy texture in your dessert, something that stuff from a can simply won't achieve. 

To get the perfect whipped cream, you’ll need to whip it with an electric mixer. Wait until there are soft peaks forming on top. Just be careful not to over-whip otherwise you’ll have butter! If you over-whip, no worries, just add a little bit of liquid cream and mix gently with a spatula. Eventually, the lumps should disappear.

How do you add extra flavor to an Eton Mess?

The beauty of making an Eton Mess is that it is super versatile. You can spice it up with a dash of port, rum, cognac, or brandy very easily. Just don’t add too much. I think a little bit of port is a perfect addition. If you're not a fan of alcohol, then you can add any type of cordial. Again, don’t add too much otherwise the Eton Mess will become rather syrupy and soggy.

I recommend adding a strawberry coulis or any fruit curd to the mixture if you wish for the dessert to have extra flavor. Some people add fruit jam and are perfectly happy with the result. I just like to add more fresh strawberries.

What is chicken tikka?

Chicken Tikka, also known as Murgh Tikka, has become a well-known dish all over the world, not least in Britain.

It's traditionally made from small chunks of boneless chicken that are marinated before being baked using skewers over a grill or over charcoal after marinating in Indian spices and other ingredients.

Where did chicken tikka originate?

Punjab province
Some say it is the Punjab province of India; some say it comes from an Indian restaurant in Glasgow! To this day, it's still debated where the recipe actually comes from. Whichever story is true, it is certainly a fantastic dish that brings warmth.

Tandoor ovens
The traditional dish comprises chunks of chicken, which are marinated in spices and yogurt overnight and then roasted in an Indian "tandoor" oven. Chicken tikka is believed to date back to the days when tandoor ovens first appeared 5,000 years ago.

Mughal dynasty
Emperor Babur of the Mughal dynasty ordered his servants to pick the bones out of the chicken. This technique inspired the term tikka and has been a part of Asian culture ever since.

What's the best cut of chicken for this recipe?

This recipe calls for chicken thighs, although you can also use chicken breasts if you prefer.

How do you cook chicken tikka?

There are two ways to cook chicken tikka. It can either be grilled on the barbecue or placed under the outdoor grill pan and finished in the preheated oven. Either way, it needs to be basted for that juicy appearance.

What's the best rice to serve with chicken tikka?

The number one side of your chicken tikka is, of course, rice. Almost every type of Indian curry is served with a side of rice. The most common type of Indian cuisine is basmati, an aromatic, long-grained rice that is widely grown in India.

If you can't get hold of basmati rice, you can use jasmine rice instead. Cook the rice with a few pods of green cardamom and a cinnamon stick for a fragrant rice that pairs well with chicken tikka.

What's the best naan to serve with chicken tikka?

There are different varieties. Garlic naan is a popular choice. I love peshwari naan, which is a bit sweeter and complements the spices, bringing balance to the dish.

What's a good topping for chicken tikka?

To finish off the dish, I enjoy topping it with some freshly chopped herbs. Coriander leaves are great, but a little sprinkle of freshly chopped parsley will also do the trick. You can also consider adding some finely sliced red onion for a bit of texture and freshness or roasted chickpeas for a bit of crunch.

Refrigeration

  • Cooked Chicken Tikka: Store in an airtight container in the refrigerator for up to 3-4 days.
  • Marinated Uncooked Chicken: Refrigerate for up to 24 hours in a sealed container.

  • Cooked Chicken Tikka: Cool completely, then freeze in an airtight container or freezer bag for up to 2-3 months.
  • Marinated Uncooked Chicken: Freeze in a freezer-safe container for up to 2 months. Thaw in the refrigerator before cooking.

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice

  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • ½ teaspoon ground fenugreek (optional)
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ¼ cup fresh cilantro, finely chopped (optional)
  • 2.2lbs skinless, boneless chicken thighs
  • 3 medium-sized bell peppers (about 400g), cut into bite-sized pieces
  • 2 large red onions, cut into bite-sized pieces

Instructions

  • In a large mixing bowl, whisk together the plain yogurt, lemon juice, and vegetable oil until smooth.
  • Stir in the garlic, ginger, ground cumin, ground coriander, turmeric powder, paprika, garam masala, ground fenugreek (if using), cayenne pepper, and salt. Mix until all the ingredients are thoroughly combined, forming a smooth marinade.
  • If using fresh cilantro, fold it into the marinade for an extra layer of fresh, herbal flavor.
  • Add the chicken pieces, bell peppers, and red onion pieces to the marinade. Ensure that everything is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning during cooking. Once the chicken and vegetables are marinated, thread the chicken pieces onto the soaked skewers, alternating with pieces of bell pepper and red onion.
  • You can cook the skewers on the BBQ of in the oven.
  • Grilling on a Barbecue: Preheat the barbecue to medium-high heat. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is fully cooked and slightly charred on the edges.
  • Grilling in the Oven: Preheat the oven to 400°F (200°C) and set the oven to grill/broil mode. Place the skewers on a baking sheet lined with foil. Grill for 15-20 minutes, turning the skewers halfway through, until the chicken is fully cooked and slightly charred.

Notes

If you’ve made the tikka paste: You can substitute the dry spices (ground cumin, ground coriander, turmeric powder, paprika, garam masala, ground fenugreek, and cayenne pepper) with 3 tablespoons of the tikka paste. Mix the tikka paste into the yogurt, lemon juice, vegetable oil, garlic, and ginger to create a smooth marinade, then proceed with the recipe as directed. This will give you a richer, more concentrated flavor, as the paste already contains a balanced blend of spices.

What is a raita?

It's a classic regular yogurt-based dip with vegetables and herbs in it.

It is perfect for cooling down and balancing out some of that spiciness of some Indian dishes. In my version, I have focused on just a single vegetable and thus made a refreshing cucumber raita with mint.

Raita is actually quite a versatile dressing that you can serve in a multitude of ways. It is a great addition to Indian starters, main courses, and even snacks.

Some raitas only have cucumbers in them. Others contain other vegetables and even fruit. I have tasted many raitas in my time, some of which even had corn and carrot slices in them.

There are many types of other raitas, including pineapple raita, tomato raita, onion raita, and boondi raita.

What is cucumber raita made of?

This classic Indian yogurt sauce is a blend of cucumber, yogurt, cumin, cayenne pepper and garlic. Sometimes other ingredients like lemon juice and fresh herbs like mint are added.

Who invented cucumber raita?

Raita emerged in the Indian subcontinent several hundred years ago.

Legend has it that the Hindu sage Narada Muni invented the dish as way to cool down hot and spicy meals.

What are the best cucumbers for a raita?

In my opinion, thin skinned cucumbers are the best type for this recipe.

It's best to grate cucumber for raita. That way, you'll get a better texture. You can also chop them for a chunky raita.

So, if you want to create a memorable festive treat for your kids, or make irresistible gourmet gifts for your friends, this Chocolate Cheerio baubles recipe is for you. 

Products you need for this recipe

  • Heat proof bowls – melt your chocolate down in a couple of heat proof bowls
  • Wooden spoon – get yourself a good old fashioned wooden spoon for the stirring of the chocolate
  • White chocolate – it wouldn’t be Christmas without white chocolate 
  • Dark chocolate – if you’re making this recipe for kids, you might want to plump for plain. If you have find dark chocolate irresistible, however, this is the one for you

Call off the diet! 'Tis the season to be merry and bake some indulgent Christmas treats. When it comes to indulgence, this fun, festive crunchy chocolate Cheerios recipe is as good as it gets.

If you’re young at heart, you’ll fall in love with these little Christmas bauble treats. As for kids... well, they’ll be in dreamland! They can even help make them, which will make the Christmas chocolate snacks even more irresistible.

It’s a super simple recipe to make. First you melt the dark, or plain, and white chocolate in two separate mixing bowls. 

Then, to turn the decadence up a notch, you add crunchy peanut butter to the melted white chocolate.

Once you’ve given both bowls of melted chocolate a stir, in go the Cheerios! Like luscious little lifebuoys floating in a sea of chocolate!

Say cheerio to your Cheerios and stir them in so that every last one is covered in delicious melted chocolate. 

Now comes the magical part. Take your little acrylic bauble moulds and fill each half with the two chocolate mixtures.

Milk/dark on one side and white on the other. Make sure the mixtures meet in the middle, so that they’ll stay solid when chilled.

Try to mix things up a little and use different sized baubles.

Once you’ve chilled your little baubles for 2-3 hours, you’ll have the perfect Christmas chocolate baubles! Next comes my little trick for hanging them on your Christmas tree.

All you need to do is dip a Cheerio in the melted chocolate and attach it to the top of the bauble. Then, chill each bauble on a plate for around 15 minutes.

Once it’s chilled, the hoop will be ready. You can now attach your Chocolate Cheerio baubles to your Christmas tree.

Can I Substitute Cheerios With Another Cereal?

There are three reasons why Cheerios are great for this chocolate Christmas treat recipe:

  1. They add a satisfying crunch
  2. They don't go soggy
  3. They bulk out the chocolate

If you can’t get hold of Cheerios, don’t worry. There are a few good breakfast cereals that would work well in this recipe.

  • Cheerios Oat Crunch – these alternative Cheerios are great if you want to bring a bit of an oaty honey flavor to your chocolate Cheerio baubles
  • Honey Nut Cheerios – another great Cheerio alternative that’ll work well with this recipe, especially for those who like almonds, they also work great in this Honey Nut Cheerios Treats

What Type Of Chocolate Should I Use?

People tend to rant and rave about using the best quality, most expensive ingredients all the time. We’re not all made of money, though. Sometimes, you can be good to your pocket and get by with the basics.

This isn’t one of those occasions! If you buy cheap chocolate, this recipe will taste cheap and nasty. 

Buy the best chocolate you can afford. I recommend a brand called Callebaut. It’s a quality Belgian chocolate that’s produced specifically for cooking and baking. It tastes heavenly and is worth every penny!

If you’re going to splash out on a recipe, it should definitely be this one. After all, it’s Christmas!

Is there a quicker way to melt chocolate?

If you want to melt your chocolate quickly, you can use a microwave. Place your chocolate in a microwaveable bowl and put it in the microwave, giving it 10-second blasts at a time and stirring after each. It shouldn’t take much more than a minute. 

More Christmas chocolate treats

You can have a lot of fun with silicone moulds too. They’d be perfect for homemade advent calendar chocolate. You could even make chocolate snowflake lollies with the leftover chocolate.

If you’re using small moulds, leave out the Cheerios. Pour the dark chocolate in first because it has a thinner consistency that will capture more detail than the white chocolate.

After you’ve filled the moulds, give it a shake to get rid of air bubbles.

  1. Melt the dark chocolate in a heat proof bowl set over a pan of simmering water, making sure the base of the bowl doesn’t touch the water. Stir until smooth and remove the bowl from the pan.
  2. Melt the white chocolate in the same way and remove from the heat. Add the peanut butter to the white chocolate and stir well until smooth.
  3. Add 33g (1 cup) of Cheerios to the melted dark chocolate and stir thoroughly until all the hoops are covered with chocolate. Add the remaining Cheerios to the melted white chocolate and do the same.
  4. Now you need at least 10 x 5cm (2in) acrylic fillable baubles. Fill one half with white chocolate cheerios and the other with dark chocolate cheerios.
  5. When putting the two bauble halves together, ensure that the fillings are touching each other so that they stick together in the chilling process. Chill for 2-3 hours until firm.
  6. Remove the chocolate balls from the bauble casings.
  7. Melt a bit of chocolate and dip one cheerio in it. Attach the dipped cheerio onto the chocolate ball, which will now act as a hoop for you to hook or string through to allow you to hang it onto your
  8. Christmas tree. Repeat the process, until all balls are transformed into baubles.
  9. Place the baubles onto a plate and chill for 10 minutes.
  10. Use a hook or string to attach to your Christmas tree! Happy munching!

Notes

  • If you’re not keen on dark chocolate, you can use milk chocolate too.
  • You can also use the microwave to speed things up when melting the chocolate. Remember to give it 10 second blasts and stir in between until it’s all melted.
  • You can use different sized baubles to change things up.
  • Alternatively, you can create a homemade foodie gift for special occasions such as birthdays and Christmas. This will entail putting all the assembled concoctions in one block. Here’s how to do it: Line a shallow tin with greased baking parchment. Drop alternate spoonfuls of each chocolate mix into the prepared tin, then tap the tin to level the mixture. Chill for 2-3 hours until firm. Turn out onto a board and wrap in cellophane. Keep chilled in the fridge until giving it away.
  • Another option is simply to use a lined muffin tin and filling them with the white and dark chocolate cheerios.

When it comes to taste, they deliver a flavour very reminiscent of green peas or lentils. However, because the red kidney beans are so firm, then need to be pre-soaked in water to soften up.

You might know garbanzo beans as chickpeas! Chickpeas are very high in protein and it is a very versatile ingredient. It is used across many cuisines in the form of creating chickpea salads, chickpea falafels or even eating roasted chickpeas alone.  In terms of texture, they are usually soft and buttery, but you can easily change their texture by roasting them off. This way, they will become crispier.

Pinto beans are an integral part of Mexican cuisine. It is very common to add them into burritos, wraps or make refried beans with them, they also go well in this Cowboy Soup. Since they are soft, expect a buttery texture. They will most likely fall apart and taste slightly creamy. Also, they are a good source of protein and other healthy nutrients.

Green beans are probably my favourite vegetable side dish.  Besides using roasted green beans as a side dish, they make an excellent addition to a salad once you cut them into smaller pieces. For example, they complement this warm butterbean salad very well.  You can even control the texture of this salad. If you like your green beans a bit more firm then take them out of the boiling water a bit earlier. Otherwise, if you love your green beans extra soft, toss them in a frying pan for some extra heat.

As mentioned before, this 4 bean salad is very practical and handy for when you have run out of perishables in your refrigerator. Or when you don't feel like going to the supermarket. All you need to do is take a closer look in your kitchen cupboard and see whether or not you've got the four types of beans. Naturally, you can opt for the dried beans. However, you need to soak these overnight. If this is the case, then put them in a bowl full of water before you leave for work. They should plump up by the time you get back from the office. If you skip this step, your beans will take twice or three times as long to cook and their texture won't be as tender.

You can also used canned beans as an alternative. Canned beans don't need to be soaked in water, however you do need to be careful not to overcook these. If this happens, they might become too mushy and start falling apart in your 4 bean salad. Remember, it's about getting the texture right!

Mexican 4 bean salad

If you love Mexican cuisine as much as I do, you'll most likely want to spin this salad into a Mexican salad. To do so, just slice up one large avocado into thin strips. You can take inspiration from my mung bean salad where I've carefully cut the avocado. Next, cut up some fresh coriander, fresh chilli and sprinkle over with a bit of lime juice. If you want to take the salad to the next level, feel free to combine chipotle powder into the olive oil or just buy a chipotle style dressing. Lastly, nothing screams Mexican more than cutting up some fresh tomatoes into small squares with some thinly diced onions.

4 bean salad is far from being a plain salad. The best part is that you can easily spice up this 4 bean salad with the right dressing. This recipe calls for a traditional balsamic vinaigrette. However, you can also opt for other dressings. For a creamy dressing, you can use ranch dressing or a creamy watercress sauce. Ingredients

  • 200g (7oz) green beans, topped and tailed
  • 240g (1 tin) cooked chickpeas
  • 240g (1 tin) cooked kidney beans
  • 240g (1 tin) cooked cannelini beans
  • 2 red onions, peeled and thinly sliced
  • 1 red chilli, washed and finely chopped
  • 30ml (2 tbsp) olive oil
  • 15ml (1 tbsp) balsamic vinegar
  • 125ml (½ cup) fresh coriander leaves, washed and chopped
  • Salt and pepper, to taste

  1. Boil the green beans in salted water until fork tender. Drain and set aside.

Special Ingredients You Need For This Recipe

  • Juniper berries: These are not a typical pantry item but are easy to find in a specialty store or online. Try these juniper berries to add pepperiness and a touch of fruitiness to your apple cider turkey brine. Juniper berries are best known for being used to flavor gin, yum!
  • Kosher salt: The best option for brining as it is coarse and dissolves well into the turkey brine recipe. Kosher salt also sticks to food better and will distribute evenly across the surface of the turkey.

Special Equipment Needed to Make This Recipe:

  • Extra-large stock pot: this will come in handy for heating your brine to dissolve your ingredients. A pot with extra space for added ice and water to help cool down the brine is essential. Try this one 
  • Large brining bags: this is not a necessary item, but it can be helpful if you are tight on refrigerator space (which is often the case during the holidays!). A brining bag like this one will take up less space than a large container.
  • Large food-safe container: If you prefer to use a food-safe container with a lid, be sure to get one large enough. This will depend on the size of your turkey, but make sure the turkey is completely covered in brine solution no matter what equipment you use. 

How to make Apple Cider Brine

Step 1: Gather your brine ingredients

Gather all your dry ingredients and measure them out. I find it easiest to always pre-measure ingredients before beginning a recipe because it eliminates the possibility of making mistakes or forgetting something! 

Next, measure your wet ingredients, keeping the water and ice separate. Add your apple cider to the pot and bring to a boil. 

Step 2: Add all of your dry ingredients to boiling apple cider

Combine apple cider with your dry ingredients - brown sugar, kosher salt, black peppercorns, juniper berries, thyme, and garlic bulbs - and heat until the sugar and salt dissolves.

Step 3: Cool completely  

Remove the pot from the heat and let it cool completely. Leave it covered and set aside.

Step 4: Brine turkey 

Add the water and ice to the mixture. Place uncooked turkey in the vessel of your choice and pour the cooled brine over it, ensuring that the turkey is completely submerged in the apple cider turkey brine. 

Step 5: Place turkey brine in the refrigerator overnight

Transfer the pot, bag, or food-safe container to the refrigerator. You should brine the turkey for 1-2 hours per 450g (1lb), which means this can be done in as little as one day, depending on the size of your turkey.

Step 6: Transfer turkey and discard brine 

Remove the turkey from the brine and pat dry with paper towels before placing it in a roasting pan. 

If space and time allow, placing your turkey on a rack in its roasting pan uncovered in the refrigerator will help the skin to dry out even more and give you that crispy end result that is so desirable.

Step 7: Cook as you prefer

When you’re ready, remove the apple cider turkey from the refrigerator and cook as you prefer. This can mean roasting, smoking, or even deep-frying!

Top Tip

Rinsing the brined raw turkey can leave a mess of bacteria in the sink and surrounding areas that will need to be cleaned up…as if there isn’t enough to do on Thanksgiving day!

Variations To Apple Cider Turkey Brine

While these are the herbs used in this turkey brine recipe, they can easily be replaced with other dried or fresh herbs. Some alternatives are:

  • 3 bay leaves
  • 6g (3 tbsp) dried sage
  • 4 sprigs of fresh rosemary 
  • 20 allspice berries
  • 2g (1 tbsp) whole cloves

There are lots of options to personalize your brine, but make sure not to overcomplicate it by adding too many different spices!

If you are looking for a spicier flavor for your apple cider turkey brine, simply add 32g (¼ cup) of black peppercorns instead of the amount indicated in the recipe. 

If you can’t get hold of kosher salt, you can substitute it with half the amount of table salt, i.e. 410g (1½ cups).

You can substitute the brown sugar with maple syrup or honey. Whenever you use sugar in a brine, you need to remain alert during the cooking process. This is because the skin will brown faster when being cooked.

The risk being that the skin is brown but the meat is not actually fully cooked. The best way to navigate around this is to cover the turkey with foil halfway through cooking so that the skin doesn’t get too dark

Apple cider vinegar can also be used in your turkey brine in addition to apple cider! Simply replace half of the amount of apple cider with apple cider vinegar. 

The vinegar combined with the salt in the brine will further tenderize your turkey meat without compromising the apple cider flavor. 

For an average whole chicken, weighing around 1.8kg (4lbs), you can quarter the above amounts. The same goes for a 1.8kg (4lbs) pork loin. Whatever you do, make sure the meat is completely submerged. 

Top Tip

Do not over brine your turkey! Follow the apple cider turkey brine recipe instructions of 1-2 hours per 450g (1lb) on time and amount of liquid, ensuring to allow enough time for the turkey brine to penetrate the entire turkey.

If the turkey is left in the apple cider turkey brine for too long it will become overly salty and the texture can become spongy. 

This low-salt solution cider turkey brine was prepared for an 11kg (24lbs) turkey, which is on the large side. It all depends on what size container you used to brine the turkey in.

If there is going to be plenty of space around it, you will need more brine, because covering the whole turkey is paramount. We first made one batch of the brine and then realized it was not enough, so two batches were needed.

Can you substitute apple juice for apple cider in a brine? 

Yes, you can use apple juice the same way that you use apple cider in this recipe. Both have sugar in them, but apple cider tends to be thicker and can have some pulp to it. 

How long should you brine turkey?

Follow the rule of 1-2 hours per 450g (1 lb). So, if you have a 9kg or 20 lb turkey, you can brine put the turkey in the brine recipe at noon the day before Thanksgiving, and remove turkey the next morning ready to be cooked.

Be sure not to overbrine you turkey! The turkey breast will begin to get spongy and too salty. You should not brine turkey for longer than two days. 

If you would like to prepare the turkey ahead of time, simply put it in the turkey brine for the amount of time needed for the size of the bird. 

You can remove the turkey from the brine, pat dry, and place it in a large roasting pan leaving it uncovered in the refrigerator until you are ready to cook it. 

How long to cook a brined turkey?

One advantage of putting in the extra time for this recipe is that brined turkeys tend to cook slightly quicker than unbrined turkeys. 
Instead of calculating 15-17 minutes per pound at 325 degrees Fahrenheit for an unbrined turkey, figure on 13 minutes per pound for a turkey that has been brined.

If you decide to use a turkey roasting bag, your turkey will cook even faster. This also helps with clean up at the end of the day.

Just remember that in order to get a crispy skin you need to finish the turkey with the bag open so that the skin gets a chance to get hit with lots of heat. Cut the bag open and allow the top of the turkey to be exposed for the last 15 minutes of cooking. 

Keep in mind that times differ if you are stuffing your turkey. Add an additional two minutes per pound for a stuffed turkey. 

Can I use table salt instead of kosher salt?

Yes, but it is not ideal. Kosher salt is a larger grain salt, taking up more space but making it less dense than table salt. 

In a pinch using table salt means that you need to change the amount, using ½ of the amount of table salt as you would kosher. 

Kosher is ideal for brining because it dissolves clear into the brine, coats the surface of the meat evenly, and sticks to food better than table salt. 

Do I need to keep brine in the refrigerator?

Yes, it is important to brine the meat at a food safe temperature, which is around 40 degree Fahrenheit. 

Although brining is a form of preservation, it is important to stick to food safety when dealing with raw turkey.
