Tokai miso is made with soybeans only. Its main flavour is koku or richness. Unlike other misos its flavour only increases with boiling so it is great in curry, stews and rich sauces. Great episode of Gatten! on NHK about it.

I've only recently discovered miso, and I've been struggling to think of ways to use up the huge tub I bought! But a simple marinade sounds like a brilliant idea, will definitely try that!

This is our favourite way to eat salmon. Great in a noodle broth with loads of bok Choi.
