Hi Kim, thank you for the lovely feedback. I would suggest with bubbles and mixture separation that dropping the cheesecake from about 3 to 5 inches from the countertop onto the counter about 10 times should release the majority of the bubbles. This should give you the desired effect that you're looking for. If there's anything else I can help you with, please let me know. 🙂
