I made this lemon chia seed cake today and it was delicious! Everyone loved it. They could not stop saying how great it was. It was moist and lemony- the texture was perfect.
I followed the recipe as it was but I didn't have a stand or a hand mixer. I just mixed it by hand with a whisk and it came out great. The icing was so easy and delicious. The next time I make it, I'll make two and make a double layer cake. Thanks for the great recipe!

I love carrot cake but I try and use minimal sugar and add other veg, such as courgette, for extra moisture.
